What a cute necklace! My favorite New Year's snack would be tortilla chips with Ro-Tel Dip. To make it, you put 1 pkg. Velveeta cheese and a can of Ro-Tel tomatoes (tomatoes + chili peppers) in a crockpot and heat, sirring occasionally, until it all melts together. It's not exactly healthy, but I love it as a once-a-year treat!

ReplyDeleteHowever, I had a baby shower recently at which I served, your peanut butter fudge, and these yummy cucumber pita finger sandwiches.
Take a block of cream cheese and add a packet of italian dressing mix. Mix the two together. Spread the cream cheese mixture over 4 - 6 pitas. Cut the pitas into triangle shapes (like you would slice pizza). Add a slice of cucumber to each and sprinkle with lemon pepper. They are pretty darn yummy.
Another favorite that my mother made for us when we were kids, which is also super-easy starts with ritz crackers. Just spread some cream cheese on each cracker and spoon some sweet pepper relish on them. Howard's sweet pepper relish is my absolute favorite, but I have a hard time finding it here in indiana. Others that you find here are pretty good too.

My favorite holiday treat is Spanikopita. It is a bit labor intensive but your guests will adore you.

1 10oz package of frozen spinach
1/2 cup of chopped onion
2 clove of garlic minced
6 ounces of Feta cheese crumbled
1/2 teaspoon of dried oregano
12 sheets of Phyllo Dough (8-10 oz)
3/4 cup of melted butter
Oven 375
1)Cook spinach, onion and garlic for 7-9 minutes.
2)Drain well in colander. Squeeze out excess moisture with a spatula or spoon. In a bowl mix spinach mixture, feta and oregano.
3)Lightly brush 1 sheet of phyllo with the melted butter. Place another phyllo sheet on top and brush again. Repeat again with third sheet.
4)(Cover the remaining phyllo dough with a damp cloth to keep it from drying out).
5)Cut phyllo butter stack into 6 long strips.
6)For each triangle take 1 tablespoon of filling and place 1 inch from top of strip. Fold the end over at 45 degree angle.
7)Continue folding to form triangle that encloses the filling.
Repeat with remaining phyllo.
Ok, one more to share. I was going through recipes last night to see what I am going to make this weekend and found this recipe. It really is my favorite snack to have but it is much more labor intensive than the other two I shared. But for someone who cooks all the time like you do this is probably a breeze. I call it Vicki's famous veggie dip because my friend Vicki gave me the original recipe. I have altered it a little but....its mostly the same.

2 8oz blocks of cream cheese
1 16 oz. sour cream
12 -16 oz salsa (I just use tostitos but whatever your favorite is)
spread this mixture in the bottom of a 13 x 9 pan.
top with:
2 - 3 tomatoes diced
1 green pepper diced
1 red pepper diced
1 orange pepper diced
1 yellow pepper diced
sliced black olives
scallions/chives chopped
top with shredded mozzarella and/or monterey jack.
serve with tortilla chips. It is really my favorite and jeez look at all the vegetables you are getting with it. Doesn't that make it healthy? Seriously if you want to make it healthier you can use the 1/3 fat cream cheese and low fat sour cream and it really still comes out wonderfully yummy.

finely chopped veggies like carrots, maybe something green too like broccoli or celery depending on what I have around here
spring mix salad
Then I just assemble the above into wraps (cream cheese on tortilla, turkey, veggies, more cream cheese to hold it together) and the roll them up and cut them into small pieces. It's easy and good!

ReplyDeleteMy favorite New Year's snack is a dip that I make. I take a container of Breakstone Sour Cream, Hidden Valley ranch dip mix, spinach, and shredded cheddar cheese.
ReplyDeleteFirst, I just make the ranch dip as you normally would, then I cook spinach, let it cool, and add it to the dip.
Last, I add the shredded cheese. I blend it all together until it is mixed well, and then I refrigerate it for a few hours. It comes delicious when served with fresh veggies and crackers.
